Our pasta is kneaded and flattened through rollers. It differs in taste from “EXTRUDED” pasta which is forced through shaping dies under high pressure to the more laborious process of kneading and flattening, which develops the taste, and also gives the pasta its characteristic “AL DENTE” quality. In our plant, we have “State of the Art” machinery, all imported from Italy. We are fully automated, from the flour in our silos, through our mixer, rollers, cutter, packaging, in less than 40 minutes! Our pasta line is pasteurized to ensure that any impurities or bacteria are eliminated, thus preserving the distinct “AL DENTE” quality. This process also guarantees a prolonged product shelf life. We are Canadian Food Inspection Agency (CFIA) inspected (Establishment No. #353) and HACCP CERTIFIED.
